Tengkleng solo  merupakan salah satu varian masakan lezat dari bahan dasar daging kambing yang cukup ngetop di Solo, selain sate kambing dan gule kambing yang pastinya. Bisa dikatakan banyak penjual tengkleng di seputaran Solo. Harganya pun variatif dari pada hanya mendengar dan belum pernah merasakan nikmanya masakan ini apa salahnya jika buat sendiri di rumah. Kuah santan dengan rasa gurih dan daging kambing yang meresap dengan bumbu sepertinya selalu terdengar menggiurkan. Begitu banyak perpaduan semacam ini namun yang disebut tengkleng hanyalah satu-satunya yang berasal dari kota di Jawa Tengah ini

Berikut ini adalah Resep Cara Membuat Tengkleng Solo

Bahan:

  • 100 gr daging kambing, potong 3×2 cm
  • 100 gr Iga kambing, kemudian potong- potong sesuai dengan keinginan
  • 100 gr jeroan kambing,lalu  potong – potong
  • 100 gr daging kepala kambing, dan kemudian potong- potong
  • 600 mili liter air
  • 3 lmbr daun salam
  • 1 btang serei, di bejeg bejek hingga memar
  • 2,5 cm lengkuas, di pukul hingga memar
  • 2,5cm jahe, di bejeg huingga memar
  • 2,5 lmbr daun jeruk purut
  • 2,5 sendok makan minyak samin/minyak goreng

Bumbu Halus:

  • 4 siung bawang putih
  • 4 butir bawang merah
  • 2,5 cm kunyit bakar
  • 1 sendok teh ketumbar
  • 0,5 sendok teh merico
  • 4 butir kemiri
  • garam dapur secukupnya

Cara Membuat Resep Cara Membuat Tengkleng Solo :

  • Masak / Rebus  daging kambing, iga, jeroannya dan daging kepala kambing sampai empuk.
  • Panaskan minyak, tumis bumbu halus hingga harum. Angkat kemudian masukkan ke dalam rebusan daging, rebus kembali.
  • Masukkan daun salam, serei, lengkuas, daun jeruk, serta  jahe. Kemudian Masak dengan menggunakan  api kecil jangan terlalu besar hingga air rebusan tinggal 1/3 nya.
  • Kemudian Sajikan dalam keadaan hangat  bersama irisan jeruk nipis dan bawang goreng.
