🧴 Resep dan Cara Membuat Cuka Nanas Rumahan
📝 Bahan-bahan:
-
1 buah nanas matang (kupas dan potong kecil-kecil)
-
100–150 gram gula pasir (bisa disesuaikan)
-
1 liter air matang
-
Wadah kaca besar (misalnya toples bening)
-
Kain bersih & karet gelang untuk penutup
👩🍳 Langkah-langkah:
1. Persiapan bahan
-
Kupas nanas, buang mata dan bagian kerasnya.
-
Potong kecil-kecil termasuk bagian tengahnya (bisa ikut difermentasi).
-
Cuci bersih dan tiriskan.
2. Larutkan gula
-
Dalam wadah terpisah, larutkan gula ke dalam air matang.
-
Aduk hingga gula larut sepenuhnya.
3. Fermentasi awal
-
Masukkan potongan nanas ke dalam toples kaca.
-
Tuangkan larutan gula sampai semua nanas terendam.
-
Tutup mulut toples dengan kain bersih dan ikat dengan karet gelang (agar ada sirkulasi udara tapi tetap higienis).
-
Simpan di tempat gelap dan sejuk, suhu ruangan (hindari sinar matahari langsung).
4. Proses fermentasi (2 tahap):

Hari ke-1 s.d. ke-7: Aduk setiap hari dengan sendok kayu atau plastik bersih untuk mencegah jamur di permukaan.

Hari ke-8 s.d. ke-30: Biarkan fermentasi lanjut tanpa diaduk agar terbentuk cuka. Rasanya akan semakin asam seiring waktu.
5. Penyaringan dan Penyimpanan
-
Setelah sekitar 30 hari, saring cairan untuk memisahkan ampas nanas.
-
Simpan hasil saringan dalam botol kaca bersih, tutup rapat.
-
Opsional: Simpan lagi selama 1–2 minggu untuk pematangan rasa.
📦 Tips Penyimpanan:

Simpan di suhu ruang atau dalam kulkas.
-
Bisa tahan hingga 6 bulan–1 tahun jika disimpan dengan baik.
🔄 Catatan Tambahan:
-
Jika terbentuk lapisan putih seperti “selaput” di permukaan (mother of vinegar), itu normal dan baik—itu tanda fermentasi alami.
-
Jika muncul jamur berwarna (hitam/hijau), buang dan ulangi proses karena bisa berbahaya.
