Resep Masakan Tradisional: Tumis Bunga dan Daun Pepaya
Bunga dan daun pepaya merupakan bahan masakan khas Indonesia yang sering dimanfaatkan dalam hidangan tradisional, terutama di daerah Indonesia Timur seperti Manado, Bali, dan Nusa Tenggara. Rasanya yang sedikit pahit justru menjadi ciri khas yang digemari banyak orang. Dengan pengolahan yang tepat, kepahitan daun dan bunga pepaya bisa dikurangi hingga menghasilkan masakan yang lezat dan menyehatkan.
Manfaat Bunga dan Daun Pepaya
Daun dan bunga pepaya kaya akan antioksidan, vitamin A, C, E, serta senyawa fitokimia yang baik untuk pencernaan dan membantu detoksifikasi tubuh. Daun pepaya juga dikenal memiliki manfaat sebagai pelancar ASI, obat cacing, dan penambah nafsu makan.
Resep Tumis Bunga dan Daun Pepaya
Bahan-bahan:

1 genggam bunga pepaya, siangi
-
1 genggam daun pepaya muda, potong-potong
-
1 sendok makan garam (untuk merebus)
-
Air secukupnya
Bumbu Halus:
-
5 siung bawang merah
-
3 siung bawang putih
-
5 buah cabai merah keriting
-
5 buah cabai rawit (sesuai selera)
-
1 sendok teh terasi (bakar)
Bahan Tambahan:
-
1 batang serai, memarkan
-
2 lembar daun salam
-
1 ruas lengkuas, memarkan
-
Garam, gula, dan penyedap secukupnya
-
Minyak untuk menumis
Cara Memasak:

Rebus bunga dan daun pepaya dengan air dan 1 sendok makan garam hingga layu dan empuk, lalu tiriskan. Ini bertujuan mengurangi rasa pahitnya.

Tumis bumbu halus bersama serai, daun salam, dan lengkuas hingga harum.
-
Masukkan bunga dan daun pepaya yang telah direbus. Aduk rata.
-
Tambahkan garam, gula, dan penyedap secukupnya. Koreksi rasa.
-
Masak hingga bumbu meresap dan air menyusut.
-
Angkat dan sajikan selagi hangat.
Tips Mengurangi Rasa Pahit:

Rebus daun dan bunga pepaya bersama daun jambu biji atau asam jawa.

Bisa juga direbus dua kali, ganti air rebusan untuk hasil lebih empuk dan tidak pahit.
Cocok Disajikan Dengan:
Tumis bunga dan daun pepaya ini cocok disajikan bersama nasi putih hangat, ikan goreng, sambal dabu-dabu, atau lauk tradisional lainnya.
